Warm Weather Kid Snacks!

After school or a day of play... one of the first things you'll hear is "What's to eat?!" Whether you're working in a children's program or you're a parent at home -- snack and cooking with kids is near the top of the list. Many of the following are sure to be a hit!

QUICK AND HEALTHY KID FRIENDLY SNACKS!

  • Bagel or English muffin pizza
  • Peanut butter on a mini bagel or English muffin
  • Shaker pudding. Pour 2 cups of milk into a jar with a lid, add 1 small box instant pudding mix, and shake for one minute.
  • Tortilla rollups. Roll a tortilla with shredded cheese, microwave until cheese is soft, and dip in salsa.
  • Cereal topped with fruit and milk
  • Cheese and crackers
  • String Cheese
  • Whole grain crackers
  • Crackers with peanut butter or jelly
  • Yogurt cups
  • Fruited yogurt topped with granola
  • Cut-up vegetables dipped in low-fat ranch salad dressing
  • Sunflower seeds
  • Banana pops. Peel a banana, dip it first in yogurt and then in crushed breakfast cereal or granola; freeze.
  • Celery with low-fat cream cheese
  • Peanut butter on graham crackers
  • Fresh fruit (cut up and ready in a bowl, easy to grab and eat)
  • Breakfast bars
  • Banana or apple topped with peanut butter
  • Fruit shake-up. Put ½ cup low-fat yogurt and 1/2 cup cold fruit juice in an unbreakable, covered container. Shake it up and pour it in a cup.
  • Pudding cups
  • Applesauce cups
  • Fruit roll-ups or fruit leather
  • Raisin boxes or other dried fruit
  • Unfrosted strawberry or blueberry Pop Tarts
  • Cereal/small cereal boxes
  • Animal crackers
  • Fig bars

MORE SNACKS...

SNACK FISHING
For each child, fill a small cup with goldfish crackers.
Supply pretzel rods for fishing poles and peanut-butter to put on the ends to use as bait to snag the fish.

CHEESE HAMMERS & TOWERS
1. Cut a variety of cheese into small squares.
2. For a hammer, poke a pretzel into each one.
3. Children can connect their cubed cheese with the pretzel sticks to make cheese towers.

PRETZEL AND FRUIT KABOBS
1 bag thin stick pretzels
2 cups pineapple, mango, apple, pear, strawberries banana, grapes and other seasonal fruits...
Cut the fruit into bite-size pieces and sprinkle with lemon or orange juice to keep from browning.
Skewer the pretzel sticks with the fruit and eat right away!

GREAT STUFFED VEGGIE  SNACKS

BUGS ON A LOG...

 
MAKE 'LOGS' from any of these foods:

 •CELERY STALKS (cut to about 3 inches long)

 •APPLES (cut in halves or quarters with cores removed)

 CARROT STICKS (cut to about 3 inches long)

FILL THE 'LOGS' WITH A SPREAD

• Cream Cheese

Cream cheese and pineapple

Cheese and pimento

Peanut butter

Egg salad

SPRINKLE 'BUGS' ON THE SPREAD:

Raisins

Golden raisins

Dried cranberries or cherries

Raisenettes candy

Unsweetened cereal

Sunflower seeds

Chopped peanuts of finely chopped walnuts

Mix in chopped apple or crushed pinapple

CELERY WITH REESES PEANUT BUTTER CHIPS
4 stalks celery, sliced into 1-inch pieces
1 cup REESE'S Peanut Butter Chips
1 (8-ounce) container light cream cheese product, softened
1/4 cup nonfat milk
Optional: 1/8 teaspoon bon appétit seasoning (or dash each of celery seed, onion powder and salt)
Snack crackers (Optional)

Place peanut butter chips in small microwave-safe bowl.

Microwave at HIGH (100%) 30 seconds to 1 minute or until chips are melted when stirred; cool slightly.

Beat cream cheese product and milk in small bowl until fluffy; beat in melted chips and seasoning.

Place or pipe rounded teaspoon peanut butter chip mixture in hollow of each celery piece.

Cover; refrigerate until ready to serve.

Spread 1/2 teaspoonful peanut butter mixture on snack crackers, if desired; place prepared celery pieces on top. Makes about 2 1/2 dozen snacks.

FISH IN THE STREAM
Fill celery with cream cheese and top them with goldfish crackers!

SNACKS TO TAKE OUTSIDE...

 #1 CHEERIO/FROOT LOOP NECKLACES...A snack and craft in one!

 String Cheerios or Fruit loops onto a piece of yarn, string or licorice string.

Tie ends together so that they slip easily over a child’s head.
Children can munch on them while playing. For an extra treat-they can also be strung on very long and thin red licorice candy such as KidActivities did! (Image by KidActivities.net )

#2 MARSHMALLOW STICKS Let children make their own snack.

Set out some small or large marshmallows (your choice) and some thin pretzel sticks.Have children stick a pretzel in each marshmallow. Store in a  zip-lock bag if not eating after made.

 #3 BASIC TRAIL MIX

 
This is a great "take-along field trip snack" or "take it outdoors snack"... It will also help you clean out those "little leftovers" in your food storage.

Good all year long...
1.  In a large bowl, add any type of cereals (Cheerios, Kix, Rice Krispies, etc.)
2.  Mix in pretzel sticks, fish crackers, small snack crackers, raisins, oyster crackers, M&M's, etc.
3.  Almost anything that is left-over in the pantry.
4.  Mix well, and place in individual sandwich baggies or paper cups.

 #4 ANTS IN THE SAND
2 Graham crackers
Chocolate sprinkles
1.  Place graham crackers in a plastic sandwich bag and crush with a rolling pin.
2.  Add a few chocolate sprinkles to make ants, then seal the bag.
3.  Give the bag to the kids to take outside to eat; they can also pour it into a small bowl and eat at the table (Using their fingers, of course.)

Variations:
Add raisins (Call them beetles)
Red Hots candy (ladybugs)
Mini chocolate chips (spider eggs).

#5 SPRING AND SUMMER TIME CHICKEN FEED
Make a bowl of Chicken Feed by tossing together crisp, shoestring potatoes, salted corn nuts, shelled sunflower seeds, pistachios, dried blueberries and unsweetened coconut flakes for a crunchy, nutty treat.
(Leave out whatever you don't like)

  • SUNBAKED S'MORES- Solar-Made S'Mores

    • Have children place one graham cracker sheet in a foil pie plate
    • Sprinkle with chocolate chips, and miniature marshmallows.
    • Cover the pie plate with tin foil, and label tins for each child.
    • Place outside in a sunny hot place, check after 20 minutes.
    • They are done when the sun has melted the chocolate and marshmallow. Yummy! 
    • (You need to do this experiment when it is at least 85° F. If it isn’t hot enough outside, wait for a warmer day.)

    Note: When KidActivities made this recipe-it took longer for the marshmallows to soften-however-we topped the marshmallows and chocolate chips with another cracker before covering it will foil. Will try again and report...

    • MAKE SOLAR OVENS…

    • Take a shoe box and line the inside with foil (shiny side showing).
    • Then take a kabob skewer and put it through the long way.
    • Put plastic wrap over the top and you have an oven.
    • The most successful things you can cook are marshmallows and hot dogs.
    • Just set outside on a sunny afternoon!!!
    • The kids will find it great fun (Also, you get science and snack all in one).

    No Bake Cookies are Great in the Summer!!!

    PEANUT-BUTTER No-Bake Cookies
       • 1/2 cup butter
       • 2 cups sugar
       • 1/2 cup water
       • 2 tablespoons cocoa
       • 1/2 cup peanut butter
       • 3 cups oatmeal or 1 cup coconut
    Mix butter, sugar, water and cocoa together, bring to a boil and let boil for no longer than 30 seconds. Remove from heat and stir in peanut butter and your choice of oatmeal or coconut. Drop on wax paper using EITHER a heaping teaspoon or tablespoon -- let harden.

    A VARIETY OF SNACK IDEAS...

    MUFFIN PIZZA (Good all year long!)
    1 English muffin or bagel, split and toasted
    4 teaspoons pizza sauce or tomato puree
    3 tablespoons shredded part- skim mozzarella cheese
    Place English muffins on clean work surface.
    Spread each toasted muffin with 2 teaspoons pizza sauce
    and 1-1/2 tablespoons cheese.
    Spread with topping choices.
    Place on baking sheet or place in toaster oven and bake at 350°F, about 10 minutes or until hot and cheese has melted.

    SANDWICH ON A STICK

    Bread  
    Cheese
    Lunch meat
    Grape tomatoes
    Lettuce
    Pickles
    Olives
    Ingredients can be put out in bowls and children take what they like to  slide onto skewers.

    1. Cut up cubes of bread, cheese, and lunch meat (1/2-inch-thick cubes of ham and turkey are good).
    2. Slide the cubes onto a skewer with other foods the children like, such as a grape tomato, a piece of lettuce, a pickle, or an olive.
    3. Set out a side of mayo or mustard for dipping.

    MAKE A 'FLOWER' SNACK
    1.  Soften a large package of cream cheese and ¾ pound of shredded American cheese.
    2.  Mix together.
    3.  Put a round scoop in the center of a paper plate.
    4.  You could also use Peanut butter or cream cheese mixed with drained crushed pineapple!
    5.  Have each child arrange five round shaped crackers around the "flower" center.
    6.  Eat now or---cover with clear plastic wrap and chill.

    TURKEY ROLLUPS

    Satisfy your salty, crunchy and savory cravings in one punch with this quick snack!

    Ingredients:

    4 slices deli turkey breast (about 2 ounces total)
    8 teaspoons honey mustard or mango chutney
    Optional: Freshly ground pepper to taste
    8 sesame breadsticks
    Spread each slice of turkey with 2 teaspoons mustard (or mango chutney)
    Wrap each prepared turkey slice around 2 breadsticks

    MINI WRAPS
    Lightly spread a tortilla with a little cream cheese and place one or two slices of thin ham or turkey over the cream cheese.
    Roll tightly and cut into small rounds.

    FRUIT SALAD CONES
    Mix together:
    1 cup low fat vanilla yogurt
    1 sliced banana
    1 (11oz) can Mandarin oranges (drained)
    1 (8 oz) can pineapple chunks (drained)
    ¼ c miniature marshmallows
    Spoon into 3-4 ice cream cones.

    SWEET TORTILLA SHAPES

    • Using small fun shaped cookie cutters-- cut shapes out of a flour tortilla.
    • Place on non-stick cookie sheet and lightly brush with a little butter.
    • Lightly sprinkle (you only need a little) with a mixture of 1 part cinnamon and 3 parts brown sugar.
    • Bake in a moderately hot oven for 10 minutes for a sweet and crispy treat.

    FROM THE FREEZER IDEAS...

     

    ICE-CREAM SANDWICHES

    Ingredients:

    Graham crackers any flavor
    Ice cream
    Plastic wrap
    Let the ice cream get to a soft consistency.
    Take the graham crackers and spread one half with about half cup ice cream.
    Put another graham cracker on top and wrap with plastic wrap. Freeze for about 3 hours.

    HOMEMADE ICE-CREAM SANDWICHES
    All you need is chocolate graham crackers and cool whip. (any flavor) Spread cool whip on top of graham crackers.
    Put another graham cracker on top and cover them with saran wrap or put in freezer bags.
    Freeze for an hour or more...enjoy!

     Spread a layer of FROZEN YOGURT over graham crackers (similar to an ice-cream sandwich) and put in to the freezer until snack time. Delicious and nutritious warm weather snack...

    FROZEN S'MORES

    Want a fun treat to make with the kids that involves absolutely NO cooking or baking? These yummies are perfect for the warm days or nights!
    Ingredients:
        • 1/2 cup mini-chocolate chips
        • 2/3 cup mini-marshmallows
        • 2 cups whipped topping
        • 1 box of graham crackers, any flavor
    Directions:
    In a large bowl with a wooden spoon, stir together first three ingredients (chocolate chips, mini marshmallows and whipped topping). Mix well.
    Scoop mixture onto a graham cracker square, sandwich with another square.
    Continue making sandwiches until all of the mixture has been used up. Put sandwiches into the freezer for approximately 1 1/2 hours, or until frozen. Serve frozen.

    TRY TO FIND 'mini' ice cream cones and fill them with yogurt.
    Your kids may like them this way… or poke holes in an egg carton and stand them up so they can go in the freezer. A big hit and even the youngest ones can hold it themselves.

MAKE 'HEALTHY' SNOW CONES

To make each cone, place crushed ice in a paper cup. Mix one part unsweetened frozen apple or orange juice concentrate with one part water. Pour the diluted concentrate over the ice.

GENERAL GUIDE...

•Freeze orange juice (or any other flavored juice) in ice cube trays. When frozen put frozen juice cubes in a plastic bag to store.
•Put three to six of these cubes at a time in a blender.
•Pulse the blender -on then off, on then off, until cubes have a snowy consistency. Pile into a cup to serve. 

TIP: If you blend the entire batch at once, it will keep its carnival consistency stored in a container in the freezer. Kids can serve themselves. Adding a little water makes it “slush". Even kids who don't care for orange juice like it this way!

MAKE JELL-O following the directions. BUT...
Instead of putting in cold water, use vanilla or plain yogurt.
Pour into individual cups; put into the refrigerator or freezer till set. Yummy and good...

FIVE HOMEMADE POPSICLES

 

#1 WATERMELON POPSICLES

I cup seedless watermelon chunks
1 cup unsweetened orange juice
1 cup water.
Blend all ingredients together in a blender.
Pour into small paper cups.
Place in freezer and, when partially frozen, insert Popsicle sticks or small plastic spoons for handles.
When completely frozen, unmold by pouring hot water over bottoms of cups.

#2 FRESH FRUIT POPSICLES
Take fresh fruit juice (except pineapple juice which does not freeze well) and pour it into small paper cups or ice cube trays.
Insert Popsicle sticks.
Freeze until solid.
Remove Popsicle from cup by running under hot water for about 10 seconds.

#3 HOMEMADE FROZEN POPS
1 6-oz. can softened frozen juice concentrate softened
Try orange, grape, or fruit punch
1 juice can water
2 containers of plain yogurt
Popsicle sticks and/or cups
.....Process in blender.
.....Pour into cups and insert sticks.
.....Freeze.
.....Small paper cups work  well as molds for these recipes.

#4 JUICE CUBES
You'll need an ice cube tray that makes larger size ice cubes
Popsicle sticks
Cling wrap
Fruit juice
.....Pour the juice into the tray.
.....Cover it with the wrap.
.....Poke the sticks through the plastic into each cube section.
.....For an extra special treat, put a grape or strawberry into each section before covering.

#5 MAKE YOUR OWN PUDDING POPS
1 small pkg. instant pudding mix--any flavor
1 3/4 cup low fat milk
Mix as directed on package.
Pour into molds and add sticks.
Freeze

Cool off and MAKE POLAR BEAR CUPS...

First put ice cream and then a layer of your choice of candy--- M&M's, Kisses, Chocolate or Peanut Butter Chips.
Cover candy layer with Cool Whip...Decorate with Gummi Bears.

 

Serve in small-clear plastic cups for individual servings ..or one big vat that everyone shares. Usually, kids like to have their own :-)

MAKE AN ANT FARM... with Peanut Butter, Graham Crackers and Raisins

  • On a plate spread peanut butter.
  • In the middle erect a tunnel from the broken graham crackers.
  • Next, place the raisins on the peanut butter to look like Ants.
  • Children can eat the raisins and peanut butter with either the graham crackers or pieces of celery.
    (You can use canned chocolate frosting if you have peanut allergies in your group)

HEALTHY HOME MADE POP!
Need:
100% frozen concentrate juice (and flavor)
Carbonated water (amount required on juice can)
Small cups
Pitcher
Make frozen concentrate juice by the directions on can, substituting carbonated water for the regular water.
Pour into cups and enjoy.
Serving size 6 oz.

HOMEMADE BAGGED ICE-CREAM

Need:
     Large resealable bags
     Small resealable bags
     1 Clean Gallon Milk Jug
     Measuring Cups and Spoons
Ingredients: 
½ tsp. salt,
2 cups sugar, Milk, 2 tsp. vanilla, 4 cups half & half (dairy cream), Crushed ice,  

Optional: Crushed fruit -strawberries, peaches or raspberries 

1.  In one clean milk jug add the salt, vanilla, sugar, and half & half...
2.  Fill the rest of the milk jug with milk so that it’s almost full.
3.  You’ll need some space at the top so that you can shake up the mixture. Place the cap on the top and carefully shake the
mixture until all the ingredients are well mixed.
4.  If you have a pull off cap always keep your hand over the cap. 

  • Once the mixture is completely mixed, pour one cup of mixture into a small resealable bag.
  • The mixture will give you about 16 cups so you can give each participant one bag or assign two participants per bag to share one cup of mixture. At that time they can decide if they would like to add fresh fruit.
  • Add 1 to 2 tablespoons for fresh fruit. 
  • Place the small bag of mixture into one large resealable bag filled half way with crushed ice.
  • Have the participants add about ½ cup of salt over the ice and seal the large bag.
  • They will take turns shaking and moving the mixture around in the crushed ice.
  • You can add additional salt if need.
  • Once mixture has become frozen ice cream, divide it up and enjoy your rewards.
    Makes about 16 cups or 32 (½ cups) of ice cream.

CUPCAKE CONES...

 Ingredients: 
Flat bottom ice cream cones
Cake mix
Cupcake tin
Frosting
1. Follow the directions to make your favorite cake mix.
2.  Have the kids spoon the batter into the ice cream cones.
3.  Be careful not to fill them more than 3/4 full.
4.  Put the filled cones into the cupcake tin.
5.  Bake at 350F for 10-15 minutes.
6.  Insert a toothpick to check that they are baked through.
7.  Have  kids frost and decorate their cupcake cones.
8.  You can use different colored icing/frosting, multi-colored sprinkles or candy as decorations

"DOMINOES"
Spread peanut butter (or frosting) on graham crackers (broken into the small rectangles) and top with either chocolate chips or raisins so that they look like dominoes.

SANDWICH FACE

Just put out the ingredients and let kids get creative making faces...

 

Ingredient suggestions: Peanut Butter, Cream Cheese, or Nutella 
Bananas -sliced
Raisins
Bread or Rice Cakes (1 slice)
M&M's candy or spice drops 

  • Spread the peanut butter or _______ on the slice of bread or Rice Cake.
  • For a healthy version put 2 banana circles on the bread to look like eyes...and a mini- carrot  for the nose.  Last, make a mouth out of M&M's candy. If not using the bananas and carrot, complete the face with candy and/or raisins.

FRUIT & VEGGIE FUN!

BUTTERFLY BITES #1

Put out apple slices, mini carrots, pretzel sticks and raisins or dried cranberries. Have kids use apple slices for the wings, carrot for the body and pretzel sticks for antennae. Decorate with raisins. (Image by KidActivities.net) 

BUTTERFLY BITES #2

Ingredients:
Stalks of celery, Twist pretzels, Pretzel pieces, Raisins and Spreadable cheddar, any cream cheese or peanut butter

Directions:
Wash celery and cut in half crosswise. Fill each celery piece with 1-tablespoon cheddar cheese, cream cheese or peanut butter. Add two pretzel twists for wings. Use pretzel pieces for antennae and raisins for decoration. Eat your butterfly before it files away!

FRUIT ON A STICK

Cut up a variety of fruit such as...
Apples, bananas, kiwis, mango and whole grapes.
Thread them onto a skewer for a delicious summer time treat.
Add a few pieces of marshmallows between the fruit.

CREAMY FRUIT DIP
Ingredients:
  • 1 jar marshmallow cream
  • 8 ounce bar of cream cheese (softened)
  • Sliced fruit ( Strawberries, melons, cantaloupe, etc.)
Mix the marshmallow cream and cream cheese well.
Take favorite fruit and dip into the creamy mixture--or serve with fruit on a stick.

 STAR SHAPED FRUIT

 Have some with your summer fruit! Pull out the star-shaped cookie cutters and serve the shapes mixed in a fruit bowl...on a platter...or on long tooth picks or skewers! Wonderful for 4th of July! Watermelon, canteloupe and honey dew would all work nicely. (Image by KidActivities.net)

FROZEN FRUIT KABOBS
1/4 cup orange juice
2 tablespoons orange blossom honey
16 medium strawberries, hulled
16 (2-inch) chunks fresh pineapple cubes
2 large bananas, peeled and sliced crosswise into 16 pieces
1/4 cup unsweetened, shredded coconut
1/4 cup ground or finely shredded chocolate

  • Mix the orange juice with the honey in a large bowl.
  • Add all the fruit and toss together with a spoon to completely coat the fruit.
  • Skewer the fruit in any order that you like on 4 separate skewers.
  • Roll the skewered fruit in the ground coconut and chocolate.
  • You can mix the coconut with the chocolate or keep them separate.
  • You may need to use your fingers to help coat the fruit.
  • Line a baking sheet with parchment paper.
  • Lay the skewered fruit out on the baking sheet and cover with a sheet of plastic wrap.
  • Freeze the fruit until completely firm.
  • Serve frozen --Serves 4

 APPLE PALM TREE ON THE BEACH

 

Ingredients:
Apple or pear slices (The palm Fronds)
Favorite variety of graham crackers (tree trunk)
Peanut butter--if no allergies (Beach)
Raisins (Coconuts)

 

Simply create tree as in the image by KidActivities.net. Have extra ingredients to munch on!

FRUIT BURRITOES
To make 4 fruit burritos:
4 6-inch tortillas
4 TBS peanut butter
1 banana, sliced
4 strawberries, sliced
1 peach, peeled & sliced (remove pit)
1/4 cup blueberries
4 TBS vanilla yogurt

Spread about 1 TBS peanut butter over each tortilla. Place fruit slices down center of each burrito. Drizzle about 1 TBS vanilla yogurt over fruit. Kids love to design & roll their own burrito. Roll up the tortilla, burrito-style (fold up one side, tuck under fruit, fold up bottom, then roll the other side).

 ORANGE SMILES... Very easy and kids think it's fun!

Cut orange in half and then into wedges that look like smiles. As children eat the orange snack...they put the wedge into their mouths and over their teeth. Ta-daa--Orange Smiles. M's on the right shaped her wedge to resemble a vampires long tooth! (Images by KidActivities.net)

HOW EASY AND CUTE IS THIS?! WATERMELON ON A STICK!

Cut a whole watermelon in half. Next cut triangle shaped wedges from the watermelon. (It was interesting-the watermelon we used had six perfect wedged shapes in the melon half. We just followed the natural sections for the  pictured wedges)

With a small sharp knife (have adult do this) cut a small slit in the bottom of the green rind. Insert a popsicle stick into the slit! Nice, easy, and a little different for a warm sunny day! (Image by KidActivities.net)

SIX BANANA RECIPES...

 BANANA IN A BLANKET

1 (6 inch) tortilla
1 tablespoon smooth peanut butter
1 medium banana
1 teaspoon maple syrup or honey
1 tablespoon crunchy, nutty nugget cereal
1.  Lay tortilla on a plate.
2.  Spread peanut butter evenly on the tortilla.
3.  Sprinkle cereal over peanut butter.
4.  Peel and place banana on the tortilla and roll the tortilla.
5.  Drizzle maple syrup or honey on top.

 

#2 FROZEN BANANA POPS
Need:
Popsicle sticks
Bananas (cut in half),
Creamy Peanut Butter or dip-able chocolate-ready to dip
Crushed cookies, granola, or graham crackers
1.  Cut bananas in half and stick a Popsicle stick into the banana - so it looks like a Popsicle.
2.  Freeze for about 10 min.
3.  Coat the bananas with peanut butter or dip it in chocolate.
4.  Next dip into the crushed cereal mixture. (Or any of the ingredients below-in #3)
5.  Crushed fruit loops work well.

#3 CHOCOLATE DIPPED BANANA CHUNKS

Bananas - Peel the bananas and slice into several pieces.
Place the 8 oz. chocolate chips in a microwave safe bowl and cook on high until melted - about 1 minute, stirring every 30 seconds until smooth.
Optional: Dip the banana slices in the chocolate, then roll them in other ingredients as desired: Colored sugars...cinnamon sugar...peanut butter... chopped nuts...coconut... ice cream sprinkles...crushed cookies.

 #4 FROZEN MONKEY TREATS
A healthy snack that kids will like! Peel a banana and cut it in half.

  • Insert Popsicle sticks into the cut ends.
  • Dip the bananas into yogurt --- and then roll the bananas in chopped nuts, crushed cereal, or coconut shavings.
  • Place the bananas on a small waxed paper-lined baking sheet and set the sheet into the freezer for an hour or so.
  • Fun to make and even more fun to eat!

#5 QUICK BANANA ICE
1.  Take a few ripe bananas and mash them in a bowl.
2.  Cover and place in the freezer for about 30 minutes.
3.  Remove from freezer, fluff up with fork for a healthy, ice cream like treat.

#6 TASTES JUST LIKE 'BANANA ICE CREAM'

This treat is similar to the above--however-- first slice ripe bananas into circles and THEN freeze.. 
To freeze-- spread out on a plate (if making soon)... or keep in a baggie if ice cream is made at another time.

When frozen, whirl in a blender until smooth. Although some say bananas easily blend --I find I get better results when a couple tablespoons of milk are added. Mash whatever small lumps are left.

Eat as is--or add a squirt of syrup, chocolate chips, or whatever you like with your banana ice cream. (The sample image used 1.5 bananas.)

TIP: When eaten immediately, the consistency is much like a 'soft-serve' dairy treat. When placed in freezer, it becomes more firm like ice-cream. Kid Activities' family prefers the soft-serve version. It seems the taste changes a bit when frozen again. FROZEN MANDARIN SLICES
Peel a few mandarin slices and cover in plastic wrap.
Place in the freezer for about an hour for a thirst quenching treat.

Wash a bowl of seedless grapes, and then set the grapes in the freezer for about an hour.
Poke colored toothpicks into the grapes to serve.

FROZEN APPLESAUCE & FRUIT CUPS
Ingredients:
1 cup Chunky or Regular Apple Sauce
10 ounce package frozen strawberries, thawed
11 ounce can mandarin orange segments, drained
1 cup grapes, if desired
2 tablespoons orange juice concentrate
1.  In medium bowl, combine all ingredients.
2.  Spoon fruit mixture into individual dishes or paper cups.
3.  Freeze until firm.
4.  Remove from freezer about 30 minutes before serving.
     Makes 7 (1/2 cup) servings.

YOGURT KISSES

This is a quick, healthy and refreshing snack!

Simply take yogurt--the sample used a small container of regular raspberry Activa but any brand will do--and drop it by small teaspoons onto a plate or cookie sheet covered with wax paper. Place in freezer and ta-daa...yummy and nice yogurt kisses!

When frozen keep in covered container or plastic baggie and return to freezer.

If you would like a perfect "button shape"--put yogurt in a baggie. Snip of a corner of the bag and squeeze out perfect round shapes. Be sure to keep small;  they are eaten with fingers and melt quickly. (Image by KidActivities.net)

A COUPLE SUMMER TIPS USING 'CUPCAKE LINERS'! One 'under' and one 'over'...

 

When your kids are enjoying, Popsicles, Fudgesicles, or an Ice-Cream cone--- insert a cupcake liner through the bottom of the stick or cone to catch the drips!

 LOVELY FRUITED LEMONADE...

 First, make your favorite lemonade. Add a variety of sliced fruit. After being refrigerated, the lemonade will pick up the color and taste of the added fruit.

ORANGE SIPPER
Using a knife or the tip of a potato peeler, poke a hole about one third of the way through an orange. (Be sure the orange is the type with a lot of juice such as a Valencia)
Insert a plastic straw into the hole.
When thirsty, suck the orange juice out of the orange.
(You may need to "massage" the orange before you start)

REFRESHING and PRETTY WATERMELON COOLER

...This one is sooo good and easy too!

 

Ingredients: Watermelon chunks and frozen lemonade ice-cubes ( A couple strawberries thrown into the blender would also add a nice taste!)

This is extremely easy to make...just chunk up a watermelon and put into a blender. After combining watermelon, add PRE-MADE lemonade ice-cubes and continue to whirl in the blender. This drink will not be 'slushy' but more of a smooth or watery drink.

Add a few ice-cubes (made from water) to a glass and enjoy!

The cooler is best if drank immediately-- as it will separate as it sits... (The pictured drink was made using about 3 cups of watermelon and about 7 small lemonade ice-cubes. If too many frozen-lemonade cubes are used, they will overpower the drink.

MAGICAL LAYERED JUICE
Ingredients:
1/4 cup chilled fruit nectar--apricot or peach
1/4 cup fruit punch drink
6 oz. glass

Pour fruit nectar into glass.
Tilt the glass and SLOWLY add the fruit punch.
Do not stir.
Makes one serving

COOL & REFRESHING MINT SHAKE  

2 scoops vanilla ice cream 
3/4 cup milk
3 or 4 drops green food coloring and a few  drops of peppermint extract flavoring...to suit your taste. 
Chocolate syrup

Put ice cream, milk, peppermint, a few squeezes of chocolate syrup, and food coloring into a blender. Blend until smooth and green. Pour into glass.

NOTE: Having just made the above recipe, I added a few more large scoops of ice cream for a thicker shake. Either decrease the milk or increase the ice-cream. Don't be afraid to add the chocolate syrup. It doesn't change the color and gives it a good taste.  Image by KidActivities.net

SMOOTHIES...
are easy and fun to make
– you don’t even need a recipe! For a simple smoothie, all you need is a blender, fruit and a liquid. You can use fresh fruit in season or keep frozen fruit on hand to use year round.


To boost the nutritional value of your drink, you can toss in a little wheat germ or uncooked oatmeal. A homemade smoothie makes a quick, tasty breakfast or a snack full of fiber, vitamins and protein. It’s like a milkshake without the guilt.

General Directions: Start by placing about a half-cup of liquid in the blender, then a sliced banana, or a cup of other fruit, and purée until smooth, gradually adding more liquid until you reach the desired consistency. If you use fresh fruit and want an instantly chilled smoothie, replace a little of the liquid with a few ice cubes.

 Here are a few tips:
1. For a FROSTY DRINK, use frozen fruit (bananas work well).
2. AVOID sweetened frozen fruit as this adds calories and may make the drink too syrupy sweet.
3. If it’s TOO THICK, add more milk, 100% fruit juice or soymilk.
4. If it’s TOO THIN, add more fruit, ice cubes, yogurt (fresh or frozen) or tofu.
5. It it’s TOO TART, add honey or a little sugar.
6. If it’s TOO SWEET, add lemonade or a small spoonful of lemon juice.

ORANGE BASED DRINKS...


MORNING SUNRISE SMOOTHIE
1 banana, peeled and sliced
1/2 cup of strawberries
1/2 cup of orange juice
A handful of ice cubes
Any yogurt

Place all ingredients in blender and blend until smooth.

ORANGE SMOOTHIE
6 oz Orange juice concentrate — frozen
1 c Milk
1 c Water
1/4 c Sugar
1/2 tsp Vanilla
10 Ice cubes
Place all ingredients in a blender. Cover and blend until smooth. Serve immediately. Serves 6.

ICEY ORANGE DELIGHT
Ingredients:
5 scoops orange sherbet
3 scoops vanilla ice cream
5 ice cubes
2 cups orange juice, no pulp
1/2 cup low-fat milk
1 cup fresh blueberries
1 cup fresh strawberries
Whipped cream

Blend all together to make a smoothie consistency drink. Pour into a frosted glass, top with whipped cream, blueberries and strawberries.
Number of servings: 2

ORANGE FROSTY
1/2 cup frozen orange-juice concentrate
1 cup milk or plain yogurt
1 teaspoon sugar, optional
4 to 5 ice cubes

Place all ingredients in a blender or food processor and blend. Makes four 1/2-cup servings. For variation, add a ripe banana, a ripe peach, or a cup of fresh strawberries

ORANGE CREAM
Only two ingredients!
1 cup orange juice
4 scoops vanilla frozen yogurt
Combine the orange juice and frozen yogurt in a blender or food processor. Blend until creamy. Serves 1.

MOO-LESS ORANGE JULIUS
Soy milk is used in this smoothie, instead of cow's milk. There is also orange juice concentrate and sugar or sugar replacement.
Ingredients:
1 cup vanilla soy milk
1/4 cup frozen orange juice concentrate
1 cup water
1/4 cup sugar (or Splenda)
1 teaspoon vanilla
6 ice cubes
Place all ingredients in the blender, and blend until smooth.
Two large servings

ORANGE JULIUS #1
1/2 of a 6 ounce can (or 1/3 cup) frozen orange juice concentrate
1/2 cup water
1/2 cup whole milk
1/2 tsp vanilla extract
5 or 6 ice cubes
PREPARATION:
Combine all ingredients in a blender, cover, and blend until smooth. About 30 seconds. Serve immediately. Instead of milk, use a few scoops of vanilla ice cream. This will make the mixture smoother and creamier.

EXACTLY LIKE ORANGE JULIUS IN THE MALL…
Ingredients
2 cups orange juice
1 cup water
2 tablespoons powdered coffee creamer
1/2 cup sugar
14-16 full sized ice cubes
1 teaspoon vanilla extract
1 peeled orange, for extra flavor (optional)
Directions
...Add all ingredients into blender and blend on high until no ice chunks are left.

Tips: 

It is not recomended to exchange the powdered creamer with milk, as the acid in the orange juice will curdle the milk! Powdered milk may be used in emergency! Reviews on this drink are excellent!

ORANGE PINAPPLE SMOOTHIE
1 cup orange juice
2 cups pineapple chunks packed in their own juice, drained
1 banana
1/4 cup skim milk
2 Tbsp. honey
4-5 ice cubes
Place all ingredients in a blender and purée until smooth.

ORANGE PINAPPLE COCONUT SMOOTHIE
1/4 cup orange juice
1/4 cup pineapple juice
1 tbsp coconut milk
1/2 banana
1/4 tsp grated fresh ginger root
1/2 cup crushed ice or 2 small ice cubes
Add all ingredients to blender and process until smooth.

ORANGE APRICOT SMOOTHIE
1 cup milk
1 tablespoon Apricot Jam
1 teaspoon vanilla extract
1 cup orange juice
2 ice cubes
Directions:
Combine ingredients in blender and blend until smooth. Pour into glasses and serve immediately with drinking straws.

FROSTY ORANGE COOLER
Ingredients:
2 cups cold orange juice
4 generous scoops orange sherbet
Chilled ginger ale
PREPARATION:
Pour about 1/2 cup orange juice into each of 4 tall glasses. Add a scoop of orange sherbet to each glass. Fill glasses with ginger ale. Stir slightly to blend.
Makes 4 servings. (More if put in small Dixie cups)

 

TWO PEACH SMOOTHIES

 

PERFECT PEACH SMOOTHIE
2 cups milk
1 cup canned peaches including juice syrup
1 cup vanilla yogurt
3 ice cubes
Directions:
Combine ingredients in blender and blend until smooth. Pour into glasses and serve immediately with drinking straws

PEACH SMOOTHIE
2 peaches, peeled, pitted and FROZEN
1/2 cup plain yogurt
2 Tablespoons maple syrup
1 teaspoon vanilla

Chop frozen peaches into medium chunks. Put yogurt, maple syrup and vanilla in blender. Put lid on blender. Turn blender on highest setting; drop frozen peach chunks in through the opening in the blender lid, one at a time until thoroughly pureed.

Good for breakfast...also good with frozen strawberries, frozen peeled bananas, etc.

 

CHOCOLATE BASED DRINKS

 

CHOCOLATE BANANA & MORE SMOOTHIE
Ingredients:
1 cup plain nonfat yogurt
2 teaspoons peanut butter
2 teaspoons chocolate syrup
1 frozen banana
Combine in a blender and mix until smooth.

CHOCOLATE MINT DRINK (More of a float)
This is a chocolate mint drink with milk, ice cream, malted milk powder, and mint flavoring.
1/2 cup chocolate malted milk powder
4 cups cold milk
dash salt
1/4 teaspoon peppermint extract
1 teaspoon vanilla extract
1 pint chocolate or vanilla ice cream
In a pitcher, dissolve malted milk powder in about 1 cup of the milk; add remaining milk. Stir in salt, peppermint, and vanilla. Chill thoroughly. Pour into glasses and add a scoop of ice cream just before serving.
Serves 4 to 6.

cups milk
2 tablespoons chocolate syrup
1 teaspoon cinnamon
1/4 cup chocolate chips
2 ice cubes
Directions:

2 cups apple juice
1 cup frozen strawberries
1 cup frozen blueberries
1 teaspoon honey

1 cup plain, low-fat yogurt (blueberry would be nice but any will work)

1 pint fresh blueberries or 2 cups (10 oz.) frozen blueberries, slightly thawed
1 cup pineapple, orange and strawberry juice blend or pineapple-orange juice
1 container (8 oz.) low fat vanilla yogurt
2 teaspoons sugar
Directions:
In the container of an electric blender, combine blueberries, juice, yogurt and sugar. Blend until smooth, about 1 minute. Serve immediately in tall glasses.

BLUEBERY SUPREME...
Great in the morning!
1 cup fresh blueberries
4 scoops vanilla frozen yogurt
1/2 to 1 cup milk
Combine the blueberries, frozen yogurt and milk in a blender or food processor. Blend until smooth, adding more milk if necessary. Serves 1.

RASBERRY/STRAWBERRY/MIXED BERRY


EASY FRESH BERRY SHAKE
1 cup milk
½ banana, sliced
¼ cup fresh berries
Combine all ingredients in a blender and mix well. Makes 4 to 6 small servings.

Combine all ingredients in blender; mix until smooth and frothy.

1 cup frozen concentrated raspberry juice
1 cup frozen raspberries

RASBERRY SMOOTHIE
1 cup orange juice
1 cup raspberry yogurt
1 cup vanilla frozen yogurt
1/2 frozen banana (chunks)
1 1/2 cup frozen raspberries
Place all ingredients into a blender in the order listed. Blend at a low setting for the first minute, then the high setting until smooth.

COCONUT-STRAWBERRY FIZZ
This is cool and creamy, but light---with strawberries, coconut milk and a nice soda fizz.
Ingredients:
1/2 cup coconut milk
4 cups frozen strawberries
3 Tbsp sugar
1 cup club soda
Combine all ingredients in blender and process until smooth. Pour into two tall glasses.

BANANA AND MORE SMOOTHIES...

 

To make a 'Smoothie'...In a blender, blend EAGLE BRAND® and remaining ingredients until smooth, stopping to scrape down sides. Serve immediately.

To make 'Pops'... Spoon banana mixture into 8 (5-ounce) paper cups. Freeze 30 minutes. Insert wooden craft stick into the center of each cup; freeze until firm. Makes 8 pops.

Other Fruit Smoothies:
Substitute 1 cup of your favorite fruit and 1/2 cup any fruit juice for banana and orange juice.

BANANA & STRAWABERRY SMOOTHIE
 
•2 bananas
  •1 1/2 cups pineapple juice
  •1 (8 ounce) container vanilla low-fat yogurt
  •1 cup fresh or frozen strawberries - preferably fresh and very ripe!
Peel bananas and slice into 1/2 inch pieces. Put on a baking sheet without overlapping and freeze until they get hard. (Or add a few ice-cubes and use bananas as is...) When frozen, put into an electric blender along with pineapple juice, yogurt and strawberries. Whirl until smooth.

Combine all ingredients in a blender. Cover and blend on high speed for 1 min.

2 cups plain fat-free yogurt
1 (8-ounce) can crushed pineapple in juice, undrained
1 ripe medium banana
8 packets sugar substitute

1 teaspoon vanilla

Fresh pineapple slices, for garnish (optional)
Place all ingredients in blender. Cover; blend until smooth. Pour into 4 serving glasses. Garnish with pineapple slices, if desired.

FROZEN BANANA & CHOCOLATE SHAKE
Frozen banana chunks are combined in the blender with chocolate syrup, milk, chocolate ice cream:
3 or 4 bananas, peeled, cut into chunks and frozen
1/2 cup chocolate syrup
1 cup milk
2 large scoops chocolate ice cream
3 tablespoons Malt Powder (usually found in the ice cream syrup section of the store)
Extra chocolate syrup (optional)
Banana slices (optional)

In blender, combine banana chunks, chocolate syrup, milk, chocolate ice cream and malt powder. Blend until smooth. To serve swirl the insides of four tall, clear glasses with the additional syrup, if you wish. Pour in the shakes. Float slices of banana on top, to garnish.

TIP: Whenever you have bananas that are ripening too quickly, peel them, cut them into chunks, and place then in the freezer in zipper-type bags. As you need them, you'll have them frozen to add to the coolness and thickening of ANY drink.

Garnish with blueberry skewers spiraled with thin strips of orange peel, if desired. Yields 2 portions.

You may want to consider buying "seedless" watermelon, which has small, white seedpods (instead of black seeds) that are edible and virtually unnoticeable once you blend the melon. If making these at home (and not for SAC) for a special touch---serve in tall frosted glasses and top with a sprinkling of mini chocolate chips.
Ingredients:
3 cups fresh watermelon cubes
1 cup crushed ice
1 cup watermelon, raspberry or lime sherbet
4 tsp. lime juice
1/2 cup miniature semisweet or white chocolate chips 

  • Wash the whole melon as you would other fruits and vegetables, and cut it into quarters. (The number of quarters you'll need to yield 3 cups of cubes will depend on the size of the melon.)
  • Slice each quarter you plan to use lengthwise into three wedges, and then slice the flesh away from the rind. 
  • Use a fork to scrape away the seeds and chop the melon into cubes.
  • Combine the crushed ice, watermelon cubes, lime juice and watermelon, raspberry, or lime sherbet, and blend until smooth.
  • Pour the mixture into the frosted glasses and top each one with a half dozen miniature chocolate chips.

Serves four if using large glasses---more if in small cups for kids...

TROPICAL BREEZE MILKSHAKE
5 cups chocolate or vanilla ice cream
2 1/2 cup milk
1 1/4 cup canned unsweetened coconut milk
1 large pineapple, peeled, cored, chopped
5 ripe bananas, peeled
3 medium papayas, peeled, seeded, chopped
32 strawberries, hulled
Directions
Blend 1 1/4 cups ice cream, 1/2 cup plus 2 tablespoon milk, 5 teaspoons coconut milk, 1/4 of pineapple, 1 1/4 bananas, 1/4 of papayas and 8 strawberries in blender until smooth.
Pour into large pitcher. Repeat with remaining ingredient in 3 more batches.

REFRESHING MINT SHAKE (Nice for Spring time or St. Paddy's Day!) 

2 scoops vanilla ice cream 
3/4 cup milk
3 or 4 drops green food coloring and a few  drops of peppermint extract flavoring...to suit your taste. 
Chocolate syrup

Put ice cream, milk, peppermint, a few squeezes of chocolate syrup, and food coloring into a blender. Blend until smooth and green. Pour into glass.

NOTE: Having just made the above recipe, I added a few more large scoops of ice cream for a thicker shake. Either decrease the milk or increase the ice-cream. Don't be afraid to add the chocolate syrup. It doesn't change the color and gives it a good taste.

This one is sooo good and easy too! REFRESHING and PRETTY WATERMELON COOLER

 Ingredients: Watermelon chunks and frozen lemonade ice-cubes ( A couple strawberries thrown into the blender would also add a nice taste!)

This is extremely easy to make...just chunk up a watermelon and put into a blender. After combining watermelon, add PRE-MADE lemonade ice-cubes and continue to whirl in the blender. This drink will not be 'slushy' but more of a smooth or watery drink.

Add a few ice-cubes (made from water) to a glass and enjoy!

The cooler is best if drank immediately-- as it will separate as it sits... (The pictured drink was made using about 3 cups of watermelon and about 7 small lemonade ice-cubes. If too many frozen-lemonade cubes are used, they will overpower the drink. The glass in the sample is very large; this amount would fill two regular size glasses. NOTE: It is actually my husband's favorite summer drink that has been sampled this year! Oh! And did I forget to mention how much healthier this is than a soft drink beverage? ALL FRUIT SUMMER COOLERS
(Something nice for you at home...)
Keep this frozen fruit concoction prepared in your freezer all summer for easy access to a cool beverage.
Ingredients:
1 (12 oz.) can frozen lemonade concentrate, thawed
1 (12 oz.) can frozen pineapple mango juice concentrate, thawed
1 (12 oz.) can frozen grape juice concentrate, thawed
3 bananas
6 cups water
1 (2 liter) bottles diet lemon-lime soda
In a blender, puree the first four ingredients until smooth. Pour into 4-quart container. Stir in water. Freeze until firm. To prepare smoothies, thaw slightly. For each smoothie, scoop 1 cup of frozen mixture into blender. Add 1/4 to 1/2 cup soda. Blend until smooth. Serve immediately.

I copied this recipe from someone else-but like her-I keep this mixture in my freezer so that it is available whenever anyone wants a cool and refreshing drink. I often substitute other flavors of juice and sometimes add fresh strawberries.

FRUIT FIZZY SLUSH
Don’t plan your summer party without this refreshing drink
. Pour one can of Sprite (it doesn’t have caffeine) into a blender, along with small ice cubes. Add several large strawberries, a handful of blueberries, or other favorite fruit to the mix. Blend the mixture until it has the texture of slush. Pour into a glass and garnish with a cherry on top.

FRUITED LEMONADE... So much prettier than regular lemonade!

First, make your favorite lemonade. Add a variety of sliced fruit. After being refrigerated, the lemonade will pick up the colors and taste of the added fruit.

PINEAPPLE AND COCONUT SLUSH

The tropical flavors of pineapple and coconut are perfect together blended with ice.
Ingredients:
1 cup pineapple juice
1 cup crushed pineapple
1/2 cup coconut milk (canned or fresh)

CLASSIC LEMONADE
This lemonade is quick and easy and refreshing on a hot summer day. Pour a large pitcher and garnish with fresh raspberries, cranberries or slices of lemon.
  • 10 lemons
  • 3 cups water
  • 2 cups sugar
  • 4 cups crushed ice
Cut 1/2 OF ONE LEMON into thin slices and set aside. Juice a(Squeeze) theremaining 9 1/2 lemons and pour into a glass pitcher or punch bowl. Stir in the water and sugar until dissolved. Pour in the crushed ice and float the lemon slices on top.
About 6 glasses

SPRING OR SUMMERTIME PUNCH!
Easy...only two ingredients!
2 gallon lime sherbet
2 liters 7-up or Sprite
Let the sherbet soften in the refrigerator for 1 to 2 hours before preparing. Mix sherbet and soda in punch bowl or large mixing bowl with a hand mixer on medium speed until well blended.

YUMMY LIME DRINKS
Put one, or two small scoops of lime sherbet in a clear plastic glass... Pour 7-Up over the sherbet.
Optional: Add a dollop of whipped cream, green sugar sprinkles and a maraschino cherry!

HOME-MADE SODA POP
Ingredients: Fruit Juice, Club Soda
Directions: Fill a glass 2/3 full with your favorite fruit juice. Then add club soda and stir briefly. For variety, try mixing two or more fruit juices, like orange and cranberry or grape and lemonade, before adding the club soda.

PURPLE COW
Need:
¼ cup unsweetened grape juice
1 cup milk
1 sliced banana
Mix all ingredients together in a blender.

Ingredients:
Root Beer, vanilla ice-cream, chocolate syrup
Directions:
Place 2 tablespoons of syrup in bottom of large glass. Add root beer, stirring until liquid is within 2 inches of top of glass. Add a huge scoop of ice cream.

Ingredients:
1/4 cup chilled fruit nectar--apricot or peach
1/4 cup fruit punch drink
6 oz. glass

Pour fruit nectar into glass.

ZESTY PUMPKIN SMOOTHIE
1/2 cup pumpkin puree
1 cup vanilla yogurt
2 cups milk
1/2 teaspoon cinnamon

Directions:
Combine ingredients in blender and blend until smooth. Pour into glasses and serve immediately with drinking straws.

PUMPKIN SMOOTHIE
4 servings, about 1 cup each
1 qt. (4 cups) milk
1 pkg. (4-serving size) JELL-O Butterscotch Flavor Instant Pudding & Pie Filling
1/2 cup vanilla ice cream, softened
1 tsp. pumpkin pie spice
PLACE all ingredients in large pitcher with tight-fitting lid; cover. Shake vigorously 1 minute or until well blended.
POUR evenly into 4 glasses. Serve immediately. (Mixture thickens as it stands. Thin with additional milk, if desired.)

A WINTERTIME GOODIE!
NORTH POLE STRAWBERRY SMOOTHIE

Makes:2 servings
1 package (10 ounces) frozen strawberries in syrup, partially thawed and undrained
1/4 cup water
2 cups vanilla frozen yogurt
2 tablespoons vanilla reduced-fat yogurt
1 strawberry-flavored or peppermint candy cane, about 6 inches long, finely crushed
Green decorating gel
1. Place strawberries and water in blender. Cover and blend on medium-high speed until slushy. Blend on medium speed until smooth. Transfer to 2-cup measure.
2. Wash and dry blender. Place frozen yogurt and reduced-fat yogurt in blender. Cover and blend on medium speed until smooth.
3. Place crushed candy cane on small plate. Pipe decorating gel around rim of two 12-ounce glasses. Dip rims into crushed candy.
4. Carefully pour yogurt mixture and strawberries at the same time into glasses, creating a half-and-half design. Serve with large drinking straws if desired.
